Meet Your Staff:
- Anna Donato-Ghani - Co-Owner & General Manager: Anna (pronounced "Ah-nah" ) has over 25 years in the food service industry. She is fluent in Spanish and Italian. Her experience with people and event planning is her specialty. Anna possesses skills for providing all facets of front and back service as catering manager including: staff management and training, menu creations and budget, food safety, and cleanliness. She can manage and coordinate small and large catered events. One of her strengths is working with people and helping them create a memorable event. Anna's background of owning restaurants as well as floral shops has given her a large scope of management skills.
- Gabby Ghani - Co-Owner & Head Chef: Gabby possesses skills for providing all facets of food service including: recipe and menu development, for standard and ethnic recipes. Gabby has 20+ years of training from Head chefs around the globe and family recipes of many ethnic backgrounds. Specializing in Indian, Italian, gourmet, American, and Mediterranean cuisine. Gabby has traveled the world and has acquired many spices and tastes that delight the palette. Cooking from scratch and using a wide variety of wholesome fresh vegetables, whole grains, regional spices and choice cut meats, really showcase his abilities.
- Blanca Sanchez - Ethnic Manager (Mexican): Blanca is a huge asset to the Pickles family. Blanca possesses skills of planning, developing menus, supervising staff and preparing authentic traditional Mexican cuisine. Blanca is Spanish speaking and relates very well with the Spanish speaking community. The regions of Mexico have many different variations of spices and traditions, Blanca works with the families to acquire the exact recipes of the old world traditions they are accustom to. Blanca has been with Pickles for 3 years.
- Pati Cotlow - Banquet Manager: Pati has extensive skills in banquet directing and serving, hiring and training staff for server sequence performance, quality hospitality which she has practiced for over 30 years. She has written training manuals that are still in use to this day. Her passion is about providing extensive training on excellent customer care. Letters of thanks and referrals are part of her extensive resume. Pati has been banquet director of Boulevard Cafe, Nicklows, and Santorini Grill. She has also been hospitality coordinator for ITT financial. Pati has been with Pickles for 2 years.
- Susan McLlroy - Catering & Sales Manager: Susan's expertise in catering to diverse groups stems from 12 years of service for the Hyatt Regency Minneapolis in food and beverage operations management in restaurants, banquet beverage, banquets and catering. This experience included high profile functions in various ballrooms that held 2000 people(Twin Cities Marathon) 1200(Boys and Girls Clubs of America and American heart Association) and 850(Specialty events, and weddings encompassing cuisines from a wide variety of cultures and ethnic backgrounds; Ethiopian, Mexican, Vietnamese, Thai, Filipino, Kosher, Russian, Italian, Spanish, Indian, Australian and German to name a few). She went on to The Marquette Hotel, a Hilton International at the time, for 6 years, in sales of event space both in the hotel and at the top of the IDS Tower and sleeping rooms to corporate, convention, film and TV accounts. In addition to being the liaison to the local Tibetan community in conjunction with His Holiness, the Dalai Lama's visit, she continued to work with other international figures and prominent corporate local accounts such as Medtronic, SUPERVALU, Carson Wagonlit Travel, and Target. She has since gone on into sales and management roles within the wine industry, working with both restaurants and retail stores, gaining an extensive knowledge of wines from around the world and food pairing. She has also acted in consultative capacities for other catering, restaurant and wine accounts. While she is currently working as Regional Manager for a prominent CA winery representing both domestic and international wines, she has been an advisement and business development partner to Pickles for almost 2 years.
